Tift County food scores 6/14

The following food service establishments were inspected in Tift County between June 5 and June 11. These establishments were evaluated according to the rules and regulations set forth in the Georgia State Chapter 290-5-14. The violations for each establishment are divided into two categories, Public Health Interventions to control Food borne Illness Risk Factors and Good Retail Practices. Risk Factors are food preparation practices and employee behaviors most commonly reported to the Centers for Disease Control and prevention as contributing factors in food-borne illness outbreaks. The establishment shall at the time of inspection correct a Risk Factor violation unless determined otherwise by the Health Authority considering the nature of the hazard. Good Retail Practices are preventive measures to control the introduction of pathogens, chemicals and physical objects into foods. Good Retail Practices violations shall be corrected within 72 hours after the inspection is completed unless otherwise directed by the Health Authority. Each establishment will have a current score and current grade.

All food shall be stored covered regardless of location. (6 points)
Good Retail Practices in violation: Scoops shall be stored in product with the handle up. Scoops with handles shall be used to dispense food. (1 point)
Fan covers in walk-in cooler shall be cleaned. Outside of bulk food containers shall be cleaned. Shelves located under preparation area shall be cleaned. Sides and area under fryers and grill shall be cleaned. (1 point)

Can opener in dessert/vegetable prep area and all ice machines shall be cleaned and sanitized as often as necessary. Quaternary sanitizer shall have a concentration of at least 200 ppm. Chlorine sanitizer shall have a concentration between 50 ppm and 100 ppm. Large mixer in back area shall be cleaned and sanitized. (4 points)
Good Retail Practices in violation: Employees shall not have fingernails past the fingertips. (3 points)
All kitchenware shall be completely air-dried before stacking. (2 points)
All non-food contact surfaces shall be cleaned including all shelving in coolers and freezers, shelf above vegetable prep table, fan covers in all coolers, air-drying rack next to dish machine. (1 point)
Ventilation shall be cleaned. (1 point)
