Tift County Food Scores for March 23, 2008

The following food service establishments were inspected in Tift County between March 7 and March 20. These establishments were evaluated according to the rules and regulations set forth in the Georgia State Chapter 290-5-14. Anyone with a question, comment or complaint should feel free to call the Environmental Health Services section of the Tift County Health Department at 386-7965.
The violations for each establishment are divided into two categories, Public Health Interventions to control Food borne Illness Risk Factors and Good Retail Practices. Risk Factors are food preparation practices and employee behaviors most commonly reported to the Centers for Disease Control and prevention as contributing factors in food borne illness outbreaks. The establishment shall at the time of inspection correct a Risk Factor violation unless determined otherwise by the Health Authority considering the nature of the hazard. Good Retail Practices are preventive measures to control the introduction of pathogens, chemicals and physical objects into foods. Good Retail Practices violations shall be corrected within 72 hours after the inspection is completed unless otherwise directed by the Health Authority.

Good Retail Practices in violation: A scoop with a handle shall be used to dispense sugar. All kitchenware shall be completely air-dried before stacking. (2 points)
Food debris on equipment and utensils shall be scraped over a waste disposal unit, or garbage receptacle or shall be removed in a warewashing machine with a prewash cycle. Air-drying racks for clean kitchenware shall be cleaned. (1 point)
Clogged dishwasher drain shall be repaired. (2 points)

Foodborne Illness Risk Factors and Public Health Interventions in violation: Hands shall be washed during food preparation as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks. (9 points)
Quaternary sanitizing solution shall have a concentration of at least 200 ppm in the sanitizer buckets and in the 3 compartment sink. Dishes shall be washed, rinsed and sanitized properly. (4 points)
Cold potentially hazardous foods shall be maintained at 41ºF or below. Hot potentially hazardous foods shall be maintained at 135ºF or above. (11 points)
All potentially hazardous ready-to-eat food shall be properly datemarked if kept in the cooler longer than 24 hours. Items can only be kept a total of 7 days. (4 points)
Good Retail Practices in violation: Thermometers shall be placed in all coolers in the warmest part. (3 points)
Ice scoop shall be stored with handle extending out of ice or on a clean surface. All kitchenware shall be completely air-dried before stacking. Tea jugs shall be stored 6 inches off the floor. A scoop with a handle shall be used to dispense ice. (1 point)
Ice machine door shall be fixed. All broken hot and cold holding equipment shall be repaired, replaced or removed. All non-food contact surfaces shall be cleaned (clean entire restaurant). Air-drying racks shall be cleaned. Cooler door handles shall be cleaned and sanitized as often as necessary daily to keep accumulation to a minimum. (2 points)
Women’s restroom shall be cleaned including countertop and mold around faucets. Trashcans shall be provided in all stalls. Lids shall be provided for all trashcans. Dumpster area shall be cleaned. Dumpster lids shall remain closed between uses. Floors, walls and ceiling shall be repaired. (2 points)
Drive-thru window shall remain closed when not in use. (3 points)
